Phi Alpha Theta/History Department French Christmas Dinner Honors December Graduates

The Eighth Annual Phi Alpha Theta/History Department Formal French Christmas Dinner took place on December 2, 2011, at Dr. Stephen Carls’s home, where the department honored graduating Phi Alpha Theta members Samuel Wiggin and Joel Wellum. During a special presentation, Dr. Carls highlighted the contributions and successes of both students and presented each with a history graduation gift bag that included a Phi Alpha Theta honor cord. In addition, Samuel was awarded Union University’s December Graduation Academic Excellence Medal in History. Another part of the evening program featured Phi Alpha Theta member Patricia Dawson, who played two Irish folksongs on an Irish flute and a French Christmas carol on a Western concert flute. Twenty-five people participated in the French dinner activity.

As for the dinner itself, the evening began with homemade tomato soup, followed by brazed asparagus, a potato soufflé, and grilled salmon topped with a special salsa. The next course was made up of five different French cheeses served on a cheese plate and an endive salad sprinkled with pomegranate seeds. For dessert, attendees had the choice of four homemade items: raspberry cheesecake, crème brulée, a lemon yule log cake, and a marquise au chocolat cake (similar to an Italian tiramisu cake). The meal concluded with coffee and tea.
