Phi Alpha Theta Ends Semester with Christmas Dinner

Union’s Delta-Psi chapter of Phi Alpha Theta History Honor Society celebrated the end of the fall semester with its annual French Christmas dinner at Dr. Stephen Carls’s home on December 7, 2013. Twenty-six people attended the event, including faculty, spouses, students, and friends of the department.

The dinner consisted of several courses, beginning with a Rachel salad and a ham and cheese croustade. The main course consisted of beef tenderloin, roasted potatoes, and creamed English peas with pearl onions. A lettuce and pomegranate salad, assorted cheeses, and French bread followed. For dessert, attendees had four options: a lemon yule log cake (bûche de noël), a Marquise au Chocolat cake (an Alsatian variation of tiramisu) with an English cream sauce (crème anglaise), a raspberry trifle (Charlotte aux framboises), and crème brulée.

A three-part program was held during the dinner. First, Carls recognized graduating history major and Phi Alpha Theta member Lowell Van Ness for his many achievements as a student at Union University. Most recently, Van Ness successfully defended his honors thesis during an oral exam, and he received Union’s Academic Excellence Medal in History. Secondly, Dr. Keith Bates, acting on behalf of other department members, presented Carls with a gift of four books, with each book containing a dedication from one of the full-time members of the department. The gift was in recognition of Carls’s 30 years of service to Union University and the history department. Thirdly, Patricia Dawson, a 2013 Union graduate and member of Phi Alpha Theta, used three flutes (a Western concert flute, a penny whistle, and an Irish flute) to provide attendees with an assortment of musical pieces, including the Christmas song “O Come, O Come, Emmanuel.”
